One question though, a lot of guys on my job site with Wildtrak's have huge tyres that stick out 50mm+ past the side of the car - how do they do this? From my experience Ford are very anal about service intervals and maintaining warranty and actively search for any angle to void claim.

But that is in Thailand.

I am not aware of a factory XLT Sport variant, only the XLS Sport. Maybe the dealer added their own "description".
